Honey roasted root vegetables with toasted hemp seeds
Need some inspiration for a recipe using local ingredients? Try this autumnal dish with sweet glazed vegetables and a topping of crunchy seeds. Get your vegetables from a local market like Reko ring in Malmö! We’ve used carrots and beets, but you can basically add any veg you have at home or that’s in season.
Ingredients
The veg
3-4 carrots
4-5 beetroots
1 Onion
1-2 cloves garlic
The rest from Gram
Rapeseed (local) or olive oil
3 tbls honey (local from Malmö’s roof tops!)
1 dl Hemp seeds (the ones at Gram with shells on are local)
Salt & pepper
2 tsp dry thyme
Method
Chop the vegetables into large pieces
Place on a baking tray and drizzle with oil, honey and crushed garlic cloves.
Season with a little salt and pepper and the thyme and toss.
Roast in the oven for 25-30 minutes, or until the vegetables are soft and browning.
While they are cooking heat a frying pan, add the hemp seeds and dry roast until they start to brown and crackle.
Serve with the seeds sprinkled over the top
